Sauce:
2 T veg oil
1/2 red onion, diced
1/4 c cider vinegar
2 T brown sugar
1/4 c mustard
1/2t allspice
1/2 t curry powder
Saute the onions 3- 5 minutes in the oil. Ad the vinegar and cook until reduced by 1/2 (or so). Add brown sugar. Whisk in remaining ingredients. Bake chicken breasts in this mixture and serve.
