I made this with soy milk and decreased the sugar...maybe 2+ T or so was perfect for my taste.
I first had horchata in Mexico...it brings back great memories. I haven't ever tried making it from scratch, and I don't really know why I haven't since it's really easy. I used to love getting this at the Mexican markets in Milwaukee but haven't done that in years since it is often made with almonds..something we try to avoid due to Eleanor's walnut/pecan allergy.
It's especially cooling to sip on this in the warm sun, so I will keep that in mind when the weather gets warmer here. I made it on a cold winter day just to try it...success!
