Salad:
1 c quinoa, cooked in chicken broth
1 red bell pepper, diced
1/2 c diced cucumber
can garbanzo beans, drained
4 oz feta, crumbled
Place all above ingredients in a bowl.
Dressing:
1/4 c lemon juice
1/2 olive oil
1 t dried oregano
few grinds black pepper
Mix together and stir over salad ingredients.
Guess we can't get enough quinoa this summer. We're keeping meals fairly simple due to the heat; and quinoa salad has been a favorite around here. I'm still looking for black quinoa......
